When it comes to easy, family friendly meals you just can’t beat this Hamburger Macaroni. There’s just something about big one pot meals that make me happy all the way down to my soul.
Once you find out how effortless this recipe is you’ll find yourself making it over and over again, just like I do. My husband loves the nostalgia of Hamburger Macaroni. His mother and grandmother used to make tomatoes and macaroni for him, which is exactly what the name describes. I like to think this recipe is a bit of a modernization of that dish. It’s full of fresh, healthy ingredients that you can feel good about feeding your family.
This Hamburger Macaroni is a dairy free version of my original Cheesy Hamburger Skillet. We found out about six months ago that dairy is a problem for my daughter so that old recipe wouldn’t work for her. I developed that original recipe as an all natural alternative to the hamburger skillet meals you can buy in the box at the grocery store. As much as I loved that Cheesy Hamburger Skillet, I actually think I love this simple Hamburger Macaroni even more. In both cases, knowing we are cutting out all those artificial ingredients included in the box at the store makes me even happier.
Serving Size: 4-6
A quick and easy weeknight dinner that the whole family will love.
- 16 ounces Macaroni pasta (you can use gluten free)
- 1 Tablespoon butter
- 1 small yellow onion, diced
- 1 pound ground beef
- 1/2 teaspoon sea salt
- 28 ounces diced tomatoes
- 2-3 teaspoons Worcestershire sauce (I use Annie’s Homemade brand)
- 1/4 cup chopped fresh parsley, or 1/2 teaspoon dried parsley
Cook macaroni according to package directions. Drain well.
While pasts is cooking, heat a large skillet over medium heat. Add butter and onion to skillet and cook until onion begins to soften.
Add ground beef and salt to skillet and cook until ground beef is browned, breaking up any large pieces of beef as it cooks. Drain any fat from pan.
Add tomatoes and Worcestershire sauce to the skillet with the ground beef and onion mixture.
Place the cooked and drained macaroni into the skillet and sprinkle with parsley. Cook for 5 minutes, stirring well to incorporate the ingredients. Serve warm.
