For some, Thanksgiving side dishes are a bit sacred. They’ve been eating the same green bean casserole and mashed potatoes for twenty years and aren’t interested in seeing anything different on their table. Then there are people like me. I’m always looking for ways to bring in fresh flavors without giving the family the shock of missing their favorites. If you feel the same way then you’ll love these simple roasted cranberries.
This definitely isn’t your usual cranberry sauce. These roasted cranberries are sweetly tart with a big hit of fresh orange flavor. It’s nothing like the jelled stuff out of the can (which is much more sugar than cranberries anyway). Cranberries are high in vitamin C and Iodine, so take advantage of the season and enjoy them in all their glory. I love the way they taste alongside our turkey but you shouldn’t stop there. They also make a lovely addition to salads, sandwiches, and even pasta. So you can enjoy them on Thanksgiving or any day.
