School is most certainly back in session. Along with homework and tests (hello, fourth grade!) there are activities on top of activities written all over my calendar. I know a lot of you are in the same boat because I talk to you at swim practice, and soccer practice, and the book fair, and open house, and all the places in between.
Even though my family has a busy schedule it’s still really important to me that we’re eating a healthy diet free of artificial ingredients. I love using easy meals like these chicken tostadas to make sure that happens.
I use my favorite all purpose slow cooker Tex Mex chicken to make things come together so quickly. There are only two ingredients needed to serve up this effortless kitchen staple – chicken and a jar of salsa. That’s it!
Lately I’ve been switching out the salsa for this New Mexico Taco Skillet Sauce by Frontera, and I love how much flavor it has. There are several flavors to choose from. This one with roasted tomato and mild red chile is my favorite right now. All of the Frontera sauces are made from all natural ingredients. They’re one of my favorite tricks when it comes to fast, fuss free dinners. (By the way, this is NOT a sponsored post and there are no affiliate links, I’m just sharing one of my tried-and-true shortcuts for getting dinner on the table!)
Whether you use the Frontera sauce or just a bottle of your favorite salsa, you will love the flavor of this ridiculously easy chicken!

My family loves assembling their own meals so these tostadas are always a hit. I’ve found that kids are much more willing to eat their vegetables when they’re the ones choosing them, so let them pile the toppings on themselves.
This chicken is perfect for so many different Mexican inspired meals – tacos, burritos, and nachos are also quick and easy dinner time favorites. I like to put any leftovers on top of a salad the next day for a healthy lunch. In my book there’s nothing better than cooking once and eating twice!
