I read so many emails from people who are distraught, claiming they can’t cook and therefore are dependent on processed foods and drive thru menus to feed their families. I’m telling you right now that the only thing you need to become a fantastic cook is the simple desire to do so. Once you make up your mind that you’ll give it a try you’ll continually surprise yourself at how easy it is. The trick is to start with the basics, but always challenge yourself.
Take this Easy Lemon Garlic Chicken for example. This fabulous, family friendly main dish needs just five basic ingredients and absolutely no special equipment or knowledge. Can you use a grater and turn on your oven? Then you are qualified to cook this meal. And since it takes less than 30 minutes to whip the whole thing up, you can effortlessly put this healthy meal on the table and skip the drive thru. Forever.
In my version of Lemon Garlic Chicken I use a microplane to zest the lemon. There is some amazing flavor in lemon zest and I use it whenever I can. I also use the same microplane to grate the garlic cloves rather than chopping them for this recipe. I think it gives the chicken a more uniform flavor. But the biggest reason I do it is because it leaves no visual trace once it’s mixed with the lemon juice, meaning there’s nothing to raise any suspicion with my kids. If you have a few suspicious kids around your dinner table you know exactly what I’m talking about. A chunk of garlic has the potential to contaminate an entire chicken breast if you’re not careful.
So while this may not be the most creative recipe you’ll see this week, I can promise you it’s one of the easiest. An easy lemon chicken recipe that's full of flavor and perfect for quick weeknight meals.
- Zest of 1 lemon
- Juice of 1 lemon
- 2 garlic cloves, finely grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 boneless, skinless chicken breasts
- 1 Tablespoon oil of choice (such as coconut, red palm, or olive oil)
- Place all ingredients in a large bowl or a large zip top plastic bag.
- Be sure to coat the chicken well with the marinade.
- Seal the bag (or cover the bowl) and place in the refrigerator for 8 hours or overnight.
- Preheat oven to 375 degrees.
- Place chicken breasts on a baking sheet.
- Bake for 25-30 minutes, or until the internal temperature reaches 160 degrees.
- Serve warm.
I like to serve this with roasted potatoes and asparagus.
