Everyone loves a Crock Pot meal at the end of the day, but let’s face it, sometimes those meals can be lacking in the flavor department.  Not this one.  This chicken is so flavorful you’ll want to make some extra rice just so you can enjoy every last drop of the sauce.  Most people think teriyaki sauce has to come from a bottle but it’s so simple to make your own with really basic, inexpensive ingredients.  And by making your own you can be sure it’s gluten free while avoiding any unwanted ingredients. 

To keep things extra speedy I use a bag of frozen rice from the store.  Have you seen them?  They are the perfect solution for meals like these.  It always seems like a waste of time to me to have a meal ready in the Crock Pot only to have to wait for the rice to cook.  But with a bag of frozen rice I can have this meal on the table within minutes.  Serve this Crock Pot Chicken Teriyaki with a green salad and some fruit and dinner is done before the kids even have the table set.

If you’re a fan of freezer cooking this recipe is perfect for that.  Just toss the ingredients into a gallon size zip top bag and pop it into the freezer.  It will be ready for the slow cooker whenever you need a super simple family meal.

Crock Pot Chicken Teriyaki is an effortless meal the whole family will love.
Ingredients
  • 1/2 cup soy sauce or Tamari sauce
  • 1 Tablespoon molasses
  • 1 Tablespoon freshly grated ginger
  • 2 cloves garlic, minced
  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup chicken stock
  • 3 cups cooked rice
Instructions
  1. Place soy/tamari sauce, molasses, ginger, and garlic in a bowl and mix together.
  2. Place chicken in the Crock Pot and cover with sauce.
  3. Pour in chicken stock.
  4. Cover and cook on low for 6 hours.
  5. Shred chicken and mix with the sauce.
  6. Serve over rice.

      Molasses is an all natural sweetener. You can find it at most grocery stores. You could try substituting with maple syrup but I’d use less than the amount called for because it will be sweeter than the molasses.
