You’ve probably noticed that we “Buffalo up” a lot of our meals around here. My husband grew up near Buffalo, NY and considers Buffalo wings the ultimate comfort food. All it takes to make his entire day is just add a little bit of Frank’s hot sauce to a recipe. His second favorite meal is a big bowl of my homemade chili, so when I came across a recipe for Buffalo Chicken Chili I said “Duh” and then kicked myself in the rear for not thinking of it myself. It’s brilliant, right?
This is such a quick and easy meal that you can have it ready to serve in about 30 minutes and use only one pot. This Buffalo Chicken Chili recipe uses basic ingredients that you can keep on hand for nights when you don’t know the answer to the “what’s for dinner” question. Another plus – it’s easy on your budget too. You can customize it to your taste – mild to hot. As written below the recipe makes a medium heat variety, but you can always add more or less hot sauce to suit you. For the kiddos I scoop out a couple of servings before adding the hot sauce. We’re still waiting for the day they acquire their taste for Frank’s.
And for those of you with food sensitivities, this meal is gluten free and dairy free.
Quick and Easy Buffalo Chicken Chili – gluten free and dairy free recipe
serves 8
1 Tablespoon extra virgin olive oil
3 garlic cloves, minced
2 pounds ground chicken
1 Tablespoon cumin
1 teaspoon chili powder
1 teaspoon paprika
1/2 cup chicken stock
28 oz canned crushed tomatoes
14.5 ounces canned diced tomatoes
2 (14.5 ounces) cans of cannellini beans, drained
1/2 cup Frank’s Hot Sauce
crumbled bleu cheese for serving if desired
Heat a large stock pot over medium heat and add olive oil. Once olive oil is hot toss in the garlic. Cook for 30 second, stirring frequently. Place the chicken into the pot, using a large spoon to break apart into small pieces. Cook until chicken is completely done.
Add cumin, chili powder, paprika, chicken stock, crushed tomatoes, diced tomatoes, and beans. Increase heat to medium high and bring to a boil. Stir in hot sauce, then reduce heat and let simmer for at least 15 minutes (or up to one hour).
Serve warm. Sprinkle with crumbled bleu cheese if desired.
