DIY All Natural Yellow Cake Mix

Who doesn’t love those boxes of yellow cake mix at the store?  You just dump it in a bowl, add eggs and oil and the next thing you know there’s a warm, perfect cake emerging from your oven.  It’s almost too easy.

The downside to those lovely little boxes is that along with all that convenience you get a whole lot of artificial ingredients and preservatives.  So what are we to do?  We still need to make all those last minute cupcakes for school and birthday parties and pot lucks and all the other little occasions that life throws at us.  Here’s your answer – an easy DIY All Natural Yellow Cake Mix.

There are at least a zillion cake flavors in the world, but in my opinion nothing beats the flavor of an old fashioned yellow cake.  It’s so sweet and a little sentimental.  But I’m telling you, you’ve never tasted anything like the flavor of a homemade version.  Incredibly rich and moist,  you’ll suddenly realize how yellow cake became such a popular flavor in the first place.

Once you whip up your yellow cake mix you can place it in a resealable bag and keep it in the freezer for up to three months or use it right away.   Come back later this week and see what I used this batch to make!

DIY All Natural Yellow Cake Mix
Makes two 9-inch layer cakes, or one 9X13-inch cake, or 24 cupcakes

2 cups granulated sugar
1 1/2 cups all-purpose flour
1 1/2 cups cake flour
1/2 cup nonfat dry milk powder
1 tablespoon baking powder
1 teaspoon salt
16 tablespoons butter (2 sticks), chilled and cut into 1/2-inch pieces
1 tablespoon vanilla extract

Place sugar, all purpose flour, cake flour, milk powder, baking powder, and salt in the bowl of a large food processor.  Pulse until well combined.

Add the butter and vanilla to the mixture and pulse again until the mixture resembles fine crumbs.

Place into a resealable bag and store in the freezer for up to 3 months or use right away.

    I really like the idea of DIY-ing this cake mix. Have you noticed that prices are on the rise and coupons are becoming less in value? So frustrating. But making your own and freezing it solves that problem! Great post. Keep them coming!
