Smoothies make the perfect healthy breakfast for busy mornings. This Pumpkin Pie Oatmeal Smoothie is my go-to breakfast for these cooler days. It only takes a few minutes to throw everything into the blender, then I pour it into a travel mug, stick a straw through the top and off I go. The protein and oatmeal keep me going all the way until lunch, and the pumpkin spice taste reminds me to be happy about finally seeing the seasons begin to change. And did I mention this was pumpkin, in a smoothie? That’s probably all that needs to be said.

Pumpkin Pie Oatmeal Smoothie
serves 1
3/4 cup milk
1/4 cup Greek yogurt, plain
1/4 cup pumpkin puree
1/4 cup rolled oats
1 Tablespoon pure maple syrup
1 teaspoon pumpkin pie spice
1/4 teaspoon pure vanilla extract
1/2 cup ice cubes
Place all ingredients in blender and secure top. Blend until smooth. Pour into glass and serve.

hmmm. i make smoothies with frozen bananas and no ice. wonder if freezing the pumpkin in an ice cube tray would work like that? otherwise it’s pretty much the same recipe…
Can the quick oats be used? or will it make a difference?
I’ve used both quick oats and regular and haven’t noticed a difference so it should be just fine.

Yes! Almond milk or coconut milk would both work great.
I made this for breakfast this morning with almond milk and it came out delish! Only thing I did was add an extra packet of stevia and 1/2 tsp of cinnamon, i like my smoothies sweet! Thanks for the yummy recipe!
