Strawberry Lemonade Popsicles -
These strawberry lemonade popsicles are treats you’ll actually want your kids to eat. They are all natural, made from healthy, whole food ingredients without a single grain of refined sugar. And not to mention, so very refreshing. These tartly sweet popsicles use fresh strawberries so they are a perfect way to enjoy strawberry season.
It’s so easy to make your own popsicles – just four ingredients, a quick stir, and these are ready for the freezer. I used these fun star shaped molds for our first popsicles of the season. They’re a favorite of both my kids, and we use them all summer long. I highly suggest keeping some of these healthy treats around for those hot days ahead.
Strawberry Lemonade Popsicles
makes 8 large popsicles
4 cups water
juice of 1 lemon, plus the zest
1 cup strawberries, chopped
1/4 cup honey
Stir all ingredients together in a large pitcher with a wooden spoon, using the side of the spoon to break up the strawberry pieces. You should taste the mixture at this time and add more honey if it’s not sweet enough for you. The sweetness may vary depending on how ripe your strawberries are.
Pour into popsicle molds, leaving at least a half inch at the top. Secure tops to the molds and place in the freezer until solid.
