Roasted Parmesan Green Beans – an easy, low fat, low carb side dish
During the summer months I depend on easy side dishes more than ever. These roasted Parmesan green beans are just the thing to pair with almost anything that comes off the grill. The best thing about them is that you can pop them in the oven and forget about them while they cook. That leaves you free to tend to the grill without running back and forth to the kitchen.
Roasting vegetables tends to give them a deeper, more earthy flavor, and that definitely holds true here. The green beans are satisfyingly mellow while the Parmesan gives them a nice sharp flavor to balance things out. You can find green beans all year long, but summer is their season to shine. I like to take advantage of seasonal produce so I’m always looking for a new way to serve our veggies. These roasted Parmesan green beans are a great alternative to the steamed version without adding a bit of extra effort.
Roasted Parmesan Green Beans – a healthy side dish
serves 4-6
1 pound fresh green beans, trimmed
1 Tablespoon extra virgin olive oil
2 Tablespoons grated Parmesan cheese
salt and pepper to taste
Preheat oven to 400 degrees.
Line a baking sheet with parchment paper and set aside.
In a large bowl, toss together green beans and olive oil. Add cheese, salt, and pepper and toss again.
Spread green beans in a single layer on baking sheet. Bake for 10-15 minutes, or until green beans are lightly browned around edges. Serve warm.

after i do asparagus this way I drizzle it with a little balsamic vinegar, so good!
