Easy Shrimp, Feta, and Tomato Bake – a healthy shrimp recipe
This meal is a perfect example of my cooking philosophy: it doesn’t take a huge investment of time or money to create an incredible meal. This healthy shrimp recipe feels like a splurge, but remains budget-friendly by using a few well chosen ingredients.
Feta cheese, garlic, onions, and fresh herbs are ingredients that are easy on the wallet but deliver a big flavor punch. I buy shrimp when it’s on sale at my store (usually saving around $3.00 per pound) and freeze it for later, so I never have to pay the regular price to satisfy my seafood craving.
The rich taste of this healthy meal is intensified by spending just a few short minutes in the oven. During that time all the flavors deepen and the feta cheese melts into perfectly bubbling deliciousness.
What I love about this healthy shrimp recipe is that you can serve it several different ways. This time I served it over whole wheat pasta, but you could use rice instead. Or heap it on top of crusty bread. Or just grab a wooden spoon and eat it right from the pan.
Shrimp Feta and Tomato Bake – a healthy shrimp recipe
1 Tablespoon extra virgin olive oil
1 teaspoon butter
1 medium yellow onion, diced
3 cloves garlic, minced
28 ounces diced tomatoes with their juices
3 Tablespoons tomato paste
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 cup fresh parsley, finely chopped (either curly or flat leaf), plus 2 Tablespoons for garnish
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/4 pound medium shrimp, peeled and deveined
4 ounces crumbled feta cheese
1 pound cooked whole wheat spaghetti
Preheat oven to 425 degrees.
Heat an oven proof skillet with the oil and butter over medium high heat. (I used my favorite cast iron skillet for this.) Add the onion and cook stirring occasionally until softened and translucent, about 3-4 minutes. Add garlic and cook for 30 seconds. Stir in diced tomatoes, tomato paste, oregano, basil, 1/4 cup fresh parsley, salt, and pepper. Reduce heat and continue to cook, stirring occasionally for about 8 minutes, or until tomatoes begin to thicken.
Remove pan from heat. Add shrimp and stir to distribute evenly. Sprinkle evenly with feta cheese. Place skillet into preheated oven for 10 – 12 minutes,or until shrimp are completely opaque and cooked through. Time may vary slightly depending on the size of your shrimp.
Divide pasta among plates. Spoon shrimp mixture over pasta and sprinkle with reserved parsley. Serve immediately.
