Easy side dish recipe: Herb Roasted Tomatoes
Side dishes aren’t usually the star of the show at meal time, but that doesn’t mean they can’t be great, even when you’re in a hurry. This herb roasted tomatoes are a staple side dish around here because they’re completely effortless and are practically bursting with flavor. They can perk up even the simplest main course. I adore them with steaks, and they are wonderful with baked chicken or fish. You can even mix them into pasta for a fresh and delicious main dish. This is a side dish recipe you’ll use time and time again.
This easy side dish is low calorie, gluten free, and dairy free. Tomatoes are full of vitamins A, C and K and are high in fiber, so they make a very healthy addition to your dinner plate. I love making this side dish all summer long when my tomato plants are overflowing with produce. If I’m grilling steaks I’ll often put the baking dish right on the grill alongside the steaks to make things even easier. The sweetness of the tomatoes is intensified from roasting them in the oven so even picky eaters can be tempted to give them a try.
Herb Roasted Tomatoes
serves 2-3
1 pint grape tomatoes, washed and dried
1 teaspoon extra virgin olive oil
1/4 teaspoon dried basil, or 1 teaspoon chopped fresh basil
1/4 teaspoon dried oregano, or 1 teaspoon chopped fresh oregano
salt to taste
Preheat oven to 400 degrees.
Place all ingredients in a baking dish. Stir to coat tomatoes with oil and herbs. Bake for 15 minutes, or until the skins of the tomatoes are just beginning to split. Serve warm.
