Banana Bites – a healthy snack recipe
2 bananas, peeled and sliced into 2″ pieces
2-4 Tablespoons nut butter (peanut, almond, cashew, or sunflower)
2 Tablespoons pistachios, or your favorite nut or seed, finely chopped*
plastic coffee stirrers or other type of stick, optional
Place banana slices on a plate. Spread a small amount of nut butter on each slice. Sprinkle with chopped nuts. Place a coffee stirrer or other type of stick in the center of each banana slice. Serve immediately.
*You can place nuts in the food processor to save a little effort. You’ll get a much finer texture this way.
I found these little coffee stir sticks near the cake decorating items in my grocery store. Cost: $1.00. And they have a zillion uses.
