Chicken Sloppy Joes | Crock Pot Chicken Recipe
These Chicken Sloppy Joes are definitely not the most elegant meal I’ve ever made, but it may just be the easiest, and was an instant hit with the entire family. There are times when those qualities are more important than trying to impress someone with a fancy recipe. We are right smack in the middle of one of those times. The holiday madness is here, and even though I tell myself every single year that I won’t get caught up in it, that I’ll do such an impeccable job planning and scheduling every last detail that I’ll be able to relax and take it easy, somehow mid-December always crashes down on me like a freight train when I’m not looking. How does that always happen? Is it just me??
This was one of those weeks where every single family member had something scheduled, at varying times of course, that had me running in several different directions for days on end. When those weeks happen I turn to every busy mother’s kitchen helper – the crock pot. It has never let me down.
This is a very simple crock pot recipe that I’m fairly certain would please just about anyone you need to feed. (Those are recipes to treasure!) All you need are some chicken breasts along with a few other pantry staples and dinner can take care of itself. I love that this is a low fat meal too – this time of year I need to save some calories every chance I get. If you choose to skip the buns it’s a great low carb/gluten free option too. All you really need is a tossed salad to go along with these and you have a fast, healthy dinner on the table without ever turning on the stove.
Chicken Sloppy Joes | Crock Pot Chicken Recipe
serves 4
4 boneless, skinless chicken breasts
salt and pepper
1 small onion (yellow or white), minced
1 can tomato paste (6 ounces)
1 can tomato sauce or puree (14.5 ounces)
2 garlic cloves, minced
1 Tablespoon yellow mustard
1 Tablespoon paprika
1 teaspoon cumin
1/4 teaspoon chili powder (or to taste)
2 Tablespoons red wine vinegar
6 hamburger buns
Season chicken breasts on both sides with salt and pepper. Place chicken in crock pot.
In a medium bowl mix together onion through vinegar. Season with salt and pepper. Pour on top of chicken.
Cover and cook on low for 6-8 hours, or until chicken is completely cooked through. Using two forks, shred chicken and stir well to coat with sauce. Spoon onto buns and serve.
