I have it on good authority that this was officially the fastest summer on record. We had more family fun this year than ever, so I’m not complaining. In fact I’m in the mood to celebrate. The end of summer isn’t a bad thing – soon the leaves will be changing and the temperatures will return to a number more suited to human life. (It’s supposed to be 95 degrees again today.) I’ve already seen two catalogs for Halloween costumes in the mail, so I know the holiday season is just around the corner. So before the frenzy is upon us I’d love the chance to just enjoy a few more lazy days of watching the kids run through the sprinklers.
Here are a few of my very favorite all natural, healthy summer time meals that definitely should be enjoyed one last time before the seasons change.
Carne Asada – flavorful, tender beef is grilled and ready for a Mexican themed fiesta in no time. A perfect dish to serve for friends.
Grilled Pork Chops with Spicy Mango Salsa – this salsa is like summer in your mouth. It goes perfectly with juicy pork chops. Plus, it doesn’t get any easier than this.
Coffee rubbed Cheeseburgers with Texas Barbecue Sauce – I’ve never enjoyed a cheeseburger more than this one. The coffee rub adds flavor depth while with sauce gives it a savory kick. Your guests will definitely be impressed with this one.
Lager and Lemon Chicken – chicken breasts marinated in beer and lemon juice? Yes, please.
Garlic Parmesan Steaks – one of our favorite meals of all time. Grilled steaks are topped with a roasted garlic paste then sprinkled with freshly grated parmesan cheese before hitting the broiler for a few short minutes. If you want to really celebrate, this is the meal to have.
Pizza Bites – we never have a party without them. The kids make a meal of them, and we get to snack while the food cooks.
Quick Black Bean Salsa - a super easy, all in one bowl dip recipe than everyone loves.
Fresh Salsa – It’s a summer must-have. Especially if you’re making the Carne Asada. And an easy way to get your fresh veggies for the day.
Tangy White Barbecue Sauce – out of this world flavor, perfect on everything from pulled pork, chicken, or grilled shrimp!
Some favorite sides: Potato Wedges with Buffalo Blue Dipping Sauce, Grilled Corn with Cilantro and Lime, and Sweet Potato Fries.
For dessert try these guiltless Black Bean Brownies. Wait until everyone is complimenting you on how great they are before you tell them they’re made from beans. Seriously, they will never guess. They’re even gluten free!
And for something fun to do with the kids, make these Homemade Marshmallows and have a little bon fire. SIng some songs, and tell stories about all the fun stuff you did this summer.
