Cowboy Burgers — Tonight was one of the rare nights when I didn’t have anything planned at all.  It was Sunday, and I decided to just wait and see what dinner time would bring.  Around 4:00 John said he had a craving for burgers.  But not just plain ol’ hamburgers – big, juicy stick to your ribs burgers.  About ten minutes later Max came running through the kitchen wearing a cowboy hat. The idea for Cowboy Burgers was born.  What a stroke of luck that ended up being, because these burgers hit all the marks John wanted and them some.

There are only three ingredients in these burgers, and it doesn’t take a genius to put these flavors together.  Beef, bacon, and cheddar cheese.  But instead of cooking the bacon separately and placing it on top, I chopped it into small pieces and added it to the ground beef, along with the shredded cheddar.  Simple, simple, simple.  And good, good, good.  As I was making the patties I made the decision to cook these on the stove instead of the grill, and I was thrilled with the outcome of that decision.  The bacon got nice and crispy in the pan, so these burgers have just a bit of crunch to go along with their juiciness when you bite into them.  Also while the bacon cooks it flavors the entire burger with it’s delicious bacony self.  Definitely not a bad thing.  The melted cheddar cheese in every bite is just a bonus in my book.  If you’re a fan of hamburgers, this is not to be missed.

Just a note: I used grass-fed beef for these burgers.  I think it’s worth the splurge every once in a while, especially in a recipe where the beef is the star.  You can read a short article about the health benefits of using grass-fed versus grain-fed beef here.

Cowboy Burgers
makes 4 burgers
1 pound ground beef
3 slices bacon, chopped into pieces (approx. 1/4″ wide)
3/4 cup cheddar cheese, shredded
salt and pepper to taste
Place beef, bacon, and cheese in a large mixing bowl.  Mix together lightly using your hands.  Divide into 4 equal portions.  Gently form each portion into a patty.  Make an indention in the center of each patty using your thumb. (This helps to prevent shrinking during cooking.)  Sprinkle both sides with salt and pepper to taste.
Heat a heavy skillet over medium high heat.  Cook hamburgers about 3-4 minutes on each side, or to desired level of doneness.  Serve warm.

    I just bought Cowboy Burgers at Whole Foods this weekend! They are SO delicious! They were 6.99 per pund, so each burger is like 1/2 pound. I make regular burgers for my two kids. So I only get two, not to bad…They use Cheddar Cheese, Jack Cheese, Bacon, and Jalepeno peppers in their burgers. I will have to attempt to make them at home now :)

        It depends on how thick your burgers are, how hot your grill is, and how “done” you like them. A half inch thick burger will usually cook to medium well in about 4-5 minutes per side over medium high heat. You can very the time depending on your preferences. Hope that helps!
