Cheesy Hamburger Skillet

Cheesy Hamburger Skillet — This should really be titled “my new favorite meal”.  It’s pure comfort food for the whole family.  We all know that mix you can buy at the grocery store that just requires you to add a pound of ground beef.  Everything’s included in the box, including loads preservatives, artificial flavors, and chemicals.  When I was a kid it was one of my favorite meals.  I’ve been on a mission to create a homemade version using more wholesome ingredients for quite a while.  I’d almost given up actually, but I’m so glad I tried one more time.  This version was the clear winner, no question about it.  And all it took was the addition of a little cream cheese.  It’s not easy to find a meal that my entire family loves, but this one makes the list.  This was so delicious I think I ate an entire serving before I even got it to the table.  My nearly two year old son ate THREE plates full, and then wanted mine.  Don’t let that fool you though – it’s much more filling than the box stuff because of the creamy, made from real cheese, sauce.  (Honestly I don’t know where he put it all!)    This is tastes so much like the other stuff, yet it’s so much better.  You have to try this one!  I know we’ll be eating it very often around here.

Cheesy Hamburger Skillet
serves 6

1 pound ground beef
1/2 cup mild onion, chopped
1 pound macaroni pasta (use gluten free if needed)
1 cup cheddar cheese, shredded
1/2 cup cream cheese
1/4 cup all purpose flour (or 1/4 cup tapioca flour for gluten free)
1 cup milk
8 ounces tomato sauce
3/4 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon garlic powder
salt and pepper to taste

Cook pasta according to package directions and set aside.

Cook ground beef in a 12″ skillet over medium high heat until it begins to brown.  Add onion, and continue cooking until meat is done.  Drain well and return to pan.  Add basil, oregano, and garlic powder and stir well.  Add cheddar cheese, cream cheese, and flour to pan.  Pour in milk and tomato sauce.  Stir well.  Continue cooking over medium heat until it comes to a low boil and begins to thicken.  Add pasta to the pan and stir well to coat with sauce.  Taste and add salt and pepper as desired.  Serve warm.

    This recipe was pretty good. It did taste a lot like what i'm used to. I used mild cheddar which i think left something to be desired, next time i am going to use sharp i guess.

    I made this tonight and it was a huge success. My son is severe ADHD and his appetite is very small because of his meds. He ate three servings!! I used a extra sharp chedder in mine and it turned out fantastic. Will be making this at least once a week.
