A good weekend breakfast is one of life’s simplest pleasures. Taking a break from the rush of morning routines, kids in their jammies (maybe their parents too), the smell of coffee in the kitchen. Those are some of my favorite things. Add this breakfast casserole to the list and I’m in heaven. This is the perfect thing to serve when you have overnight guests, but don’t save it just for company. It’s so easy to make that it doesn’t need a special occasion. The casserole will easily serve 8 people, so you might get lucky and have leftovers to enjoy during the week. (I can’t believe I’m admitting this, but I actually cut myself a chunk of cold casserole and ate it in the car on the way to school Monday morning. And enjoyed every last bite.) You can see from the photo how anxious I was to dig in to this – almost half of the casserole was gone before I took the picture!

What kind of bread can you use for this recipe as well as just to eat in the adhd diet? It appears most bread has additives in it from what I’ve seen? Any suggestions would be appreciated!!
In my opinion, conventional supermarket bread is the worst thing you can buy. There’s nothing but chemicals in that stuff. I like Rudi’s organic bread. You can get it at Whole Foods, and recently my Publix started carrying it in the freezer section. Ezekiel Bread is great too if your kids like the taste. But the best thing I ever did was buy a good bread maker. Just simple ingredients and a few minutes of measuring and then let the machine do everything. And your house will smell amazing while it bakes. (I use a Cuisinart brand bread maker.)
I have a child with ADD & a husband with high cholesterol. Are these recipes fit for my husbands needs as well?
I’m certainly no expert on cholesterol, but I’ve never known anyone who didn’t see some sort of health improvement from switching to an all natural diet that focuses on eating whole food instead of processed.
