Maybe it’s just me, but I almost always have pork in my freezer.  It’s probably because I buy it, and then can’t think of a single thing of a single thing to do with it.  I have nothing against pork, I just don’t find it all that inspiring.  So it sits in the fridge for a couple of days until I stick it in the freezer where it finds its way to the bottom of the pile and I end up forgetting about it.  But now that’s all changed.  I have the perfect recipe for all that forgotten pork.  This quick stir fry is everything you want in a family meal – it’s simple to prepare, cooks super fast, and uses ingredients that you probably have on hand right now.  And to make it even more enticing, it’s full of healthy and tasty vegetables.

Since this is still early January, I know that many people are working hard on their New Year’s resolutions to eat healthier – I certainly am one of those people.  My favorite hobby besides cooking is eating, so giving up either one of those activities would be like giving up sunshine for me.  So I’m striving to make good choices and pay attention to the number of spoonfuls I shovel into my mouth.  That’s one of the reasons I like this dish so much – it’s pretty easy on the hips and helps fulfill my vow to eat more veggies.  I was surprised at how great this sweet and sour sauce tasted given the list of ingredients.  I was really expecting something that resembled a lighted up version of sweet and sour, but it’s so much better than that.  It’s a great balance – not too sweet, not too sour – which of course is exactly what you want in this dish.  Try this one soon, and you’ll never wonder what to do with that pork in your freezer again!

Sweet and Sour Pork
serves 4
1 pound pork tenderloin, or thick-cut boneless pork chops, cut into 1/2″ pieces
3 tablespoons balsamic vinegar
Kosher salt
2 teaspoons low-sodium soy sauce, or Bragg’s Liquid Aminos Sweet and Sour Pork
1 tablespoon corn starch
3 tablespoons all natural ketchup Sweet and Sour Pork
3 tablespoons honey
2 tablespoons canola oil Sweet and Sour Pork
3-4 large cloves of garlic, minced
2 cups carrots, sliced
1/2 cup scallions, cut into 1/2″ pieces 
3 cups snow peas, cut in half
In a medium sized bowl, add pork, one tablespoon vinegar, and 1/2 teaspoon salt.  Mix the remaining vinegar, soy sauce/liquid aminos, corn starch, ketchup, honey, 1/3 cup water, and 1/2 teaspoon salt in a small bowl.  Using a whisk helps speed this up.
Heat one tablespoon oil in a large non-stick skillet over medium high heat.  Add pork, and cook until opaque, stirring occasionally to make sure all sides are brown, about 3 minutes.  Using a slotted spoon, remove pork from the pan and place on a plate.  You can line the plate with a paper towel to help absorb some of the oil.  Note: Pork will not be cooked through at this point.  Let pan cool slightly and then wipe out remaining oil with paper towels.  
Return pan to stove, turn heat to medium, and add remaining tablespoon oil.  Add garlic and cook 15 – 30 seconds.  Add carrots and scallions to pan, along with 1/2 cup water.  Cook, stirring occasionally, until vegetables are slightly tender.  Add the pork, snow peas, and soy sauce mixture to pan.  Continue cooking until pork is cooked through and the sauce begins to thicken, about 4 – 5 minutes.  
Serve with cooked rice or noodles, or enjoy it on its own.

    This tasted yummy. I used Chicken since I didn't have any pork in the house. I added some Mirin and Sachi to the recipe since I had it. I also didnt have Snap Peas…so we added regular peas. It came out perfect. I tossed it this morning over clear noodles for a hot school lunch. Thanks for sharing!!
