French Onion Soup – The Easy Way

French onion soup is one of my favorite cool weather meals.  I love how each spoonful warms me up from the inside out.  And the big flavors make it so satisfying.  Making the true version of this soup can take an entire afternoon, and more patience than I typically have on hand.  If you feel the same way then you’ll love this version.  All you need to do is slice the onions and saute them with butter, then let the slow cooker do the rest.

French Onion Soup – The Easy Way
Serves 6
3 medium yellow onions, sliced very thin
2 tablespoons butter
2 (32 ounce) cartons reduced sodium beef broth
3 tablespoons flour
1 teaspoon sugar
1 1/2 teaspoons Worcestershire sauce
1/4 teaspoon dried thyme
salt and pepper 
Cheesy Toast:
1 loaf French bread
1 cup mozzarella cheese, grated
Melt butter in a large skillet over medium heat.  Add onions and saute until golden, about 8 – 10 minutes.  Set aside.
Place broth and flour into slow cooker.  Stir with a whisk to combine.  Add onions to broth.  Stir in sugar, Worcestershire sauce, thyme, and 1/4 teaspoon pepper.  Cover and cook on low for 6 – 8 hours.  Taste soup, and add salt and pepper to taste.  You can add a little more Worcestershire sauce if you want even more flavor.
For Cheesy Toast:
Preheat broiler.  Slice French bread and place on baking sheet.  Sprinkle with cheese.  Place under broiler for approximately 4 minutes, watching closely to prevent burning.

    French onion soup is my favorite. My recipe is almost exactly the same as yours, except I ditch the Worcheshire Sauce for a big dash of brandy.
