Can’t get enough pumpkin?  Me either.  Here’s a quick way to add it to your breakfast – pumpkin oatmeal.  I made this version with old fashioned oats, but you could do the same thing with instant oatmeal for a busy weekday morning.  Pumpkin if full of amazing antioxidants and vitamins, so don’t hold back.  You can adjust the spices and sweetness to make this your own.  My version is on the sweet side, but it’s not overwhelmingly so.  Healthy, filling, and delicious – it’s a great breakfast for kids and adults!

Pumpkin Flavored Oatmeal
serves 2

1 cup old fashioned oatmeal
1 3/4 cups water
1/8 teaspoon salt
3 – 4 tablespoons pureed pumpkin
1/4 teaspoon pumpkin pie spice
1 teaspoon brown sugar
2 tablespoons pecans, chopped (optional)
2 tablespoons maple syrup
Boil water in a medium sauce pan.  Add oatmeal and salt.  Cook 5 minutes, stirring occasionally.  Remove from heat.  Stir in pumpkin, pumpkin pie spice, and brown sugar.  
Pour oatmeal into serving bowls.  Top with pecans and syrup.

    Going to try this tomorrow with steel cut oats instead of old fashioned… we’ll see how that comes together!
