One of the things I look forward to when fall arrives is pulling out the crock pot. I don’t know why, but I almost never use it in the summer. It’s one of those things that to me just says chilly weather and cozy food. It’s so welcoming to come home to the smell of dinner bubbling away, just waiting for you. I certainly don’t think that everything tastes great in the crock pot, but there are a few dishes that seem to have been invented just for it. This pulled pork is one of them. The low, slow cooking tenderizes the pork and infuses it with so much flavor, and it’s totally effortless. Just add meat and barbeque sauce to the crock pot along with a few spices and a warm family dinner will be waiting when you get home. It doesn’t get easier than this.
Pulled Pork Sandwiches
serves 4 – 6
2 lbs pork roast, trimmed of fat
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1 cup bottled all natural barbecue sauce (such as Frontera)
1/2 cup water
1 small onion, diced
Place pork roast in crock pot. Add spices, sauce, water, and onion.
Cook on Low for 6 hours.
Just before serving, shred pork with two forks. Keep the pork in the crock pot to do this so all the juices can combine. Stir well.
Serve with buns and additional barbeque sauce to taste.
