This is one of my new favorite meals.  It’s so simple to prepare that you will be totally taken by surprise by how delicious it is.  From the first bite there was a chorus of happy eating sounds.  You know, those sounds you make when you’re mouth is too full to talk but you have to express how much you love what you’re eating.  I loved it so much that it’s now on my go-to list of dinners.  It’s so easy that you can make it any night of the week, but so delicious that you’ll want to serve it for guests.  

The pork is flavored with garlic and fresh thyme, then it’s pan seared, where it gets brown and crusty on the outside.  Then into the oven to finish cooking, and it comes out perfect.  It’s virtually effortless.  Using an oven-proof pan makes prep and clean up super easy.  You may be tempted to skip the pears, but that would be a big mistake.  The combination of the roasted pears with the pork is what sets this apart.  Even my skeptical husband who would have never tried such a thing without my gentle nudging (ok bullying) couldn’t get enough.  Neither could I.  Normally tend to change and adapt recipes as I cook, but this one was so simple, and frankly perfect, that I didn’t change a thing from the original.

Herb Roasted Pork Tenderloin with Pears
Serves 4
2 lb pork tenderloin, trimmed of any fat
2 cloves garlic, sliced very thin
1 tablespoon fresh thyme leaves
1 tablespoon olive oil
salt and pepper
2 Bartlett pears, quartered and cored
Preheat oven to 475 degrees.
Lay the pork tenderloin on a cutting board and using a paring knife cut about 20 slits into pork Place a small slice of garlic and a few leaves of thyme into each.  Sprinkle all over with salt a pepper.
Heat olive oil in a large oven proof skillet.  Add pork tenderloin.  Let cook about 3-4 minutes on each side until browned all over.  Add pears to pan.
Place into heated oven and roast about 15 minutes, until pork registers 160 degrees on an instant read thermometer.  
Let rest 10 minutes.  Serve pork with pears on the side.  Drizzle each slice of pork with some of the pan juices for even more flavor.
