Only one word is needed to describe this – addictive.  I made this batch for my daughter’s preschool Halloween Party, so I added some candy corn and a spooky little spider ring to each bag for the kids.  Please don’t think for a minute that this is a Halloween only treat.  If you do then you’ll be wasting an entire year of pure enjoyment.  It’s the absolutely perfect combination of sweet and salty with a satisfying crunch.  Just the thing you want for a party, or movie night, or just to have on hand for a quick treat.  I could eat this whole recipe entirely by myself without batting an eye if I’m not careful.  That’s why as soon as I packaged them up I transferred them to the car to keep temptation at bay.  This recipe makes 15 two cup servings, and it keeps well in an airtight container so you can grab a handful whenever you want a little bite of happiness.

Caramel Corn
15 two cup servings
3 bags microwave popcorn
2 sticks butter
1 1/2 cups brown sugar, packed
1/2 cup corn syrup or pancake syrup (I used sugar-free pancake syrup)
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
Pop popcorn according to package directions.  Place popcorn into a very large bowl, or two smaller ones.  Make sure you have enough room in the bowl(s) to stir the popcorn. 
Melt butter in a medium sized sauce pan over medium heat.  Stir in brown sugar, syrup, and salt.  Raise heat to medium high and bring to a boil.  Continue boiling without stirring 
for 5 minutes.  
Preheat oven to 250 degrees. Line two baking sheets with parchment paper.  
Remove from heat.  Add baking soda and vanilla extract.  Mixture will become foamy – this is a good thing.  
Pour caramel over popcorn, distribute evenly if using more than one bowl.  Transfer coated popcorn evenly between the two baking sheet.  Bake at 250 degrees for 40 minutes total, stirring every 10 minutes.  If the popcorn is still chewy bake 10 more minutes.
Let cool completely, then transfer to containers.  
*If you want to mix in candy or chocolate pieces do so as soon as the popcorn comes out of the oven, before the caramel sets.
