Like pretty much everyone else who is responsible for making dinner, I’m always looking for something new to do with chicken.  This recipe is a family favorite.  It has a delicious creamy sauce and a crunchy cracker topping.  The ingredients are pantry staples, so it’s easy to put this on the menu during the week.  You can assemble it the night before baking, but wait until you’re ready to pop it in the oven to mix in the topping.  I love to serve it with egg noodles to soak up all the sauce.

Baked Chicken with Creamy Mushroom Sauce
Serves 4
2 Tablespoons unsalted butter, softened
1/4 cup flour
1 1/2 lb boneless, skinless chicken breasts
1/8 teaspoon pepper
1 can (10.75 oz) light cream of mushroom soup
1/4 cup light sour cream
1 cup Ritz crackers, crushed fine
1 cup cheddar cheese, grated
Preheat oven to 425 degrees.
Sprinkle chicken with salt and pepper.  Place flour inside a zip top bag.  Add chicken and shake to coat.  Place chicken in a large baking dish.  
In a bowl, combine soup and sour cream.  Spread evenly over chicken.  
In another bowl add softened butter (not melted), cracker crumbs, and cheese.  Stir to combine.  Top chicken with cracker mixture.  
Cover baking dish with aluminum foil.  Bake 10 – 12 minutes.  Remove foil and bake for another 15 – 20 minutes, until chicken is no longer pink.

    Well, it's been in the oven 30 minutes now and still pretty pink…. smells good though! I think I need a new oven!

    We had this last night and it is definitely worth repeating! My husband generally won't eat anything that contains a mushroom and he had seconds!

    Hi Michelle, your husband is right, no more Ritz crackers. But you can find similar crackers that will work. Back to Nature makes one that I use from time to time for things like this, and the 365 Brand at Whole Foods has one as well. You could also make a coarse breadcrumbs mixture from all natural or homemade bread and toast those with butter to get the same effect. I'm excited to hear you're starting the challenge.
