These sweet potato fries are by special request from a reader.  I had a potentially great recipe that I was thinking about trying, so when she asked I quickly pulled it out.  And boy am I glad she asked!  These are the best oven baked sweet potato fries I have ever tried.  They have just a bit of crunch, just a bit of sweetness – perfect.  The trick is coating the baking sheet with vegetable oil before placing the sweet potatoes on top.  These smell so great while they are baking I was anxious to try them as soon as they came out of the oven.  They were so good that I just kept eating them, and almost forgot I needed to save some for the photo!

serves 4
4 large sweet potatoes
2 tablespoons vegetable oil, plus more for the pan
2 teaspoons Kosher salt, divided
1 teaspoon brown sugar
Preheat oven to 425 degrees.
Wash sweet potatoes.  Cut each potato into thin strips.  Place into a large bowl.  Add oil, 1 teaspoon salt, and brown sugar.  Stir well to coat potatoes.
Coat a large rimmed baking sheet with vegetable oil. (I used about 1 1/2 tablespoons.)  Sprinkle the baking sheet with remaining salt.  Place sweet potatoes on baking sheet in single layer.  Bake for 20 minutes, or until potatoes are done.

    loved them! I had to leave mine in longer but they came out great! I also made sour cream/cinnamon dip to dip them into! So yum!
