I’ve got football on the brain, so for the next few weeks you’ll be seeing my Party Food category grow exponentially.  Football season is one of my favorite times of the year.  Our family is passionate about both college and pro football, so full weekends can be lost while we sit in front of the television.  I love to make platters and platefuls of finger foods and just nibble all day while the games are on.  These little pizza bites are just perfect for that purpose.  You can bet that I will be eating them all season long.  Great for tailgating, watching games with friends, or on a birthday party buffet, you will want to make these again and again too.  Sometimes I make them just for the kids to have for dinner.  It’s an easy, basic recipe – feel free to add any other pizza flavors you want.  It’s hard to mess this one up.

Pizza Bites
makes 24
3/4 cup flour
3/4 teaspoon baking powder
3/4 cup milk
1 egg lightly beaten
1/4 teaspoon salt
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon parsley
pinch of cayenne pepper, optional
3/4 cup shredded mozzarella cheese
1/2 cup pepperoni, diced
1 cup of your favorite marinara sauce
Preheat oven to 350 degrees.
Grease a 24 cup mini muffin pan with cooking spray.  Whisk flour and baking powder together to combine.  Whisk in milk, egg, salt, and seasonings until combined.  Stir in mozzarella and pepperoni.  Let stand 10 minutes.
Stir again and pour into muffin cups filling each about 3/4 full.  Bake at 350 degrees until puffed and golden, about 20 minutes.
Warm sauce and serve alongside the pizza bites for dipping.
