I love to eat, there’s no doubt about it.  And I don’t believe just because it’s a weeknight that I should have to eat something from the microwave.  Thinking about what I’m going to eat for dinner is frequently the one thing that gets me through the day and if all I have to look forward to is a TV dinner, well my day is just not going to go well.  So I’m constantly looking for ways to simplify more complicated dinners so I can get them on the table during the week.  This is a perfect example of that thought process.  I have always been in love with lasagna.  I want to eat it whenever the craving strikes, not just on Sundays when I set aside the time to make it.  So when I saw a similar method one day on Food Network it was an epiphany for me.  I could take all the things I love about lasagna and fold it up into a ramekin and have it ready in half the time.  Just perfect.  And so, so easy.  You can make this as easy or as complicated as you’d like.  During the week I take the easy route, and this recipe is for those days.  Once you make this I bet you’ll make it again, and again, not only because it’s delicious and your family will love it, but because when it pops out of that ramekin it’s just so darn cute.

There are a ton of photos in the recipe below, because they will help explain how to layer the lasagna noodles better than my words.  It really is simple, but I have a way of over explaining directions that can make things sound harder than they really are.  Trust me, you have nothing to fear about trying this recipe.

Individual Lasagnas
serves 4
8 lasagna noodles (do not use the no-boil kind)
1 pound ground beef 
1 jar of your favorite tomato sauce
1 teaspoon dried basil
2 cups ricotta cheese
1/2 cup Parmesan cheese
1 cup mozzarella cheese
Preheat oven to 375 degrees.
Boil the lasagna noodles in salted water according to package directions.  Drain and allow to cool completely.  
While pasta is cooking, brown ground beef in a large skillet over medium high heat.  Drain away the fat, and add the tomato sauce and basil.  Cook until heated through, about 3 minutes.  
In a medium sized bowl mix together the ricotta and Parmesan cheeses.  
Now the fun begins.  Place four ramekins on a baking sheet.  Spray ramekins with cooking spray.  Place one lasagna noodle across each ramekin so that the middle of the noodle is in the middle of the ramekin.  Do the same with another noodle in each ramekin, placing it at a 90 degree angle from the first.  It should look like this:

Step one.
Add about 1/2 cup of the meat mixture to each ramekin, then add about 1/2 cup of the cheese mixture to each.  Fold over one set of the lasagna noodles, like this:

Step two.
Repeat the 1/2 cup meat followed by 1/2 cup cheese mixture.  Fold over the remaining lasagna noodles.  Top each ramekin with an equal amount of the remaining meat mixture.  Top each equally with about 1/4 cup mozzarella cheese.  Here’s what they will look like before they go into the oven.

Bake at 375 degrees for about 20 minutes, or until cheese is melted and golden brown.  When they come out of the oven they will look like this:

Let them cool about 5 minutes, then run a knife around the inside of the ramekin and lift each lasagna out with a fork.

    These look great! We are empty nesters and we don't want to eat lasagna every day for a week! But, what size are your ramekins? Mine look way smaller than yours. I love your site-so few these days feel like cooking is a joy.

    Great Question! I just measured them and mine are 4" across. I think it would still work with slightly smaller ramekins, just trim off the edges of the noodles if they overlap the edge. Or, you could use this method with any small baking dish as long as it's oven safe. So glad to hear you enjoy using the site! Hope you like the lasagnas!

    Made these one night last week… they were a hit! I do need bigger ramekins, though… the ones I have are just a teeny bit too small, LOL! But the taste was great. And my kids thought having their own cup of lasagna was cool :)

    My husband gets really excited when I tell him we’re making these. Something about lasagna in a ramekin…like he thinks it’s a fun game or something. Great recipe!
