Mangoes were on sale at Publix this week.  I bought a ton and have been eating them every chance I get.  I just can’t get enough of mangoes when they’re in season.  I’ve been thinking all week about how to work them into a recipe and tonight I hit the jackpot.  Remember the jalapeno and cilantro I found in the refrigerator yesterday for lunch?  They came in handy yet again. The spicy and sweet flavors in this salsa are just made for each other.  Make the salsa ahead of time if you can and just refrigerate until ready to use.  This was so good that I literally ate the remaining salsa with a spoon before I did the dishes.  You could use it on just about anything and it would be great.  So very simple but so elegant.  A perfect summer meal.

Grilled Pork Chops with Mango Salsa
4 boneless pork chops
salt and pepper
1 mango, diced
1/2 small onion, diced
1 cup tomato, seeded and chopped (I used grape tomatoes)
1/2 cup fresh cilantro, chopped
1 small jalapeno, finely diced
1 teaspoon white vinegar
1 teaspoon olive oil
Season the pork chops on both sides with salt and pepper to taste.  Place on hot grill and cook until no longer pink, about 5 minutes on each side, depending on the thickness.
In a small bowl mix together the remaining ingredients.  Serve pork chops topped with salsa. That’s it.  Really.
