I love this recipe. I haven’t made it in a while, and had forgotten how good it can be. It’s so warm and satisfying after a busy day. And it tastes like it should be harder to make than it is – I love that. Just mix together a few pantry staples and spoon it over chicken before baking – it doesn’t get easier. The flavors mix together beautifully in the oven, and the house smells so delicious and welcoming while this is cooking. I usually spend a few minutes the night before cutting the chicken into pieces so it comes together even faster at dinner time.
Chicken Bruschetta Bake
serves 6
1 can diced tomatoes (14.5 ounces)
1 package Stove Top Stuffing, chicken flavor (6 ounces)
1/2 cup water
2 cloves garlic, minced
1 1/2 pounds chicken breasts cut into bite size pieces
1 1/2 teaspoons dried basil
1 cup mozzarella cheese, shredded
Preheat oven to 400 degrees.
Place tomatoes with their juices into a medium bowl. Add stuffing mix, water, and garlic. Stir well to combine. Set aside.
Place chicken into a 3 quart baking dish, spreading to cover the bottom. Sprinkle with basil and cheese. Top with stuffing mixture.
Bake 30 minutes or until chicken is cooked through.

This was really tasty, I loved the flavors. It was super easy to put together. I served caesar salad with it and it was perfect.
