I made this for lunch today, and it was so good that I couldn’t wait until tonight to put it up on the blog. I don’t know what made it so delicious – my love for all things with jalapenos and cilantro probably had something to do with it. I wasn’t sure what I wanted to eat until opened the refrigerator and found a lime, a jalapeno, some tortillas, and some cilantro looking back at me. There was no turning back – I had to come up with something. I just started chopping and ended up with the yummiest lunch I’ve had in a while. The flavors are so fresh and bright. It requires no cooking – just a quick whirl in the microwave to warm it up. You can easily add, subtract, or multiply the ingredients to suit your preferences. I think it would be great with some fresh corn added, and maybe even some avocado too.
Black Bean Jalapeno Dip
1 can black beans, rinsed and drained
1/4 cup fresh cilantro, chopped
1/2 small white onion, diced
3 tablespoons fresh jalapeno pepper, diced
juice of one lime
2 tablespoons olive oil, divided
salt
1 teaspoon cumin (optional)
2 flour tortillas
In a bowl mix together black beans. cilantro, onion, jalapeno, lime juice, and 1 teaspoon olive oil. Add salt to taste. Microwave on high for 1 – 2 minutes, until heated through.
Preheat broiler on low. Brush tortillas with olive oil and sprinkle with salt and cumin if using. Place directly on lower oven rack. Broil approximately 5 minutes, until tortillas are crunchy. Tear into pieces and enjoy.

Amen sister. Isn't it the BEST when you throw something together & it's fantastic??! I did something similar recently but used red onion & stirred in a little sour cream. Good call on the Cumin…will add next time!
